Essential Ingredients

  • 1 small can of tuna (100-150g), drained
  • 1/2 zucchini
  • 1/2 potato
  • 1/2 onion
  • 2-3 dried shiitake mushrooms
  • 1/2 stalk of green onion
  • 1 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp doenjang (Korean soybean paste)
  • 1 Tbsp minced garlic
  • 3 Tbsp soup soy sauce (Guk-ganjang)
  • 500ml anchovy and kelp broth (or water)

Step 1

First, prepare the vegetables. Slice the zucchini into half-moon shapes about 0.7cm thick. Dice the potato and onion into similar-sized cubes. Slice the green onion diagonally.

Soak the dried shiitake mushrooms in lukewarm water for about 10-20 minutes until softened. Trim the tough stems and slice the mushrooms into bite-sized pieces. (You can use the soaking water as part of the broth for a deeper flavor.)

In a pot, pour in 500ml of anchovy broth. Add 1 Tbsp gochujang, 2 Tbsp gochugaru, 1 Tbsp doenjang, and 1 Tbsp minced garlic. Stir well with a spoon until there are no lumps.

Add the sliced zucchini, potato, onion, and rehydrated shiitake mushrooms to the broth mixture. Stir everything together so the ingredients are submerged in the liquid.
