Super Easy Tuna Kimchi Stew
Make your kimchi stew even simpler and more delicious with just one can of tuna! This stew boasts a rich, spicy broth that’s incredibly satisfying and perfect for pairing with a bowl of rice. A must-try for those who love a kick of spice!
Main Ingredients- 1/2 can (80g) Tuna
- 100-120g Pork (belly or neck meat), about 2/3 the amount of kimchi
- 1/2 can Spam
- 1 bowl (150g) Well-fermented Kimchi
- 1/5 block (100g) Tofu
- 1/2 Onion
- 15cm segment of Scallion
- 1 Green chili or Jalapeno (optional)
- 2 cups (380ml) Rice water
Cooking Instructions
Step 1
Prepare all ingredients by cutting them into bite-sized pieces. For the kimchi, remove excess brine and chop into 3-4cm lengths. Slice the onion and scallion thinly into strips. Cut the tofu into approximately 1.5cm cubes. Slice the pork into pieces about the size of your thumb tip. Cube the Spam similarly to the tofu. If you like extra spiciness, thinly slice the chili pepper on an angle.
Step 2
Heat a pot over medium heat and add a splash of cooking oil. Once the oil is hot (you’ll see a slight shimmer or faint smoke), add the pork and stir-fry until it’s browned on all sides. Next, add the chopped kimchi and sauté for about 3-4 minutes until it softens. Finally, add the tuna or Spam and cook for another 1-2 minutes, allowing the flavors to meld. Sautéing the main ingredients first helps to deepen their umami flavor.
Step 3
Pour the prepared rice water into the pot with the sautéed ingredients. Increase the heat to high and bring to a boil. Once boiling, add the sliced onions, cubed tofu, and all the seasoning ingredients (sugar, minced garlic, red chili powder, soy sauce for soup). Stir well to combine everything.
Step 4
When the stew comes to a rolling boil, reduce the heat to medium. Let it simmer gently for about 10 minutes, with the lid slightly ajar, allowing the flavors to fully develop. Skim off any foam that rises to the surface for a clearer broth. Add the sliced scallions and chili peppers towards the end and simmer for another minute. Your delicious kimchi stew is now ready to be enjoyed!
