First, wash and prepare the vegetables for the soft tofu stew. Finely chop the onion, green onion, and zucchini. You can also add other leftover vegetables like mushrooms if you have them in your refrigerator, as they will add to the flavor. Vegetable preparation is almost complete!

Next, finely chop the Cheongyang peppers, red peppers, and green onions for garnish. While not strictly necessary, colorful garnishes make the dish visually appealing and can enhance the overall dining experience!

In a pot, heat 1 tablespoon of sesame oil over medium-low heat. Add the chopped onion, green onion, and minced garlic. Sauté them until fragrant and slightly softened, ensuring not to burn the ingredients. Stir gently as you cook to ensure even cooking.
