Spicy Tuna Kimchi Stir-Fry

This is an incredibly simple and delicious side dish made with leftover kimchi from winter preparations and spicy canned tuna. The savory flavor of the kimchi combined with the spiciness of the tuna creates a perfect match for rice, and it’s also excellent as a filling for onigiri (rice balls). We’ve used plum extract to remove any gamey smell from the kimchi and add a subtle sweetness, along with a touch of sugar for enhanced flavor. This spicy tuna kimchi stir-fry is flavorful even without sesame oil or perilla oil. Here’s a recipe for this addictive dish!

Ingredients

  • 2 cans spicy tuna (gochu-tuna)
  • 1/3 head napa cabbage kimchi (chopped)
  • 2 Tbsp plum extract (maesil-cheong)
  • 1 Tbsp sugar
  • 1 tsp toasted sesame seeds
  • 2 Tbsp kimchi brine

Cooking Instructions

Step 1

Finely chop about 1/3 of a head of napa cabbage kimchi into bite-sized pieces and place them in a pot. Add 2 cans of spicy tuna, including the oil. Pour in 2 Tbsp of kimchi brine, 1 Tbsp of sugar, and 2 Tbsp of plum extract. Stir everything together and stir-fry over high heat until well combined.

Taste the mixture as it cooks. If you prefer more sweetness, add a little more plum extract or sugar. If it tastes bland, you can add a dash of tuna fish sauce to season. However, the tuna itself is seasoned, and the kimchi is also salty, so it’s usually well-seasoned. Continue to stir-fry over high heat until most of the liquid has evaporated. Then, reduce the heat to medium-low and stir-fry for a bit longer. The mixture will be watery at first, but it will gradually dry out as the kimchi and tuna absorb the moisture.

Once all the liquid has evaporated and the ingredients are nicely stir-fried, sprinkle 1 tsp of toasted sesame seeds on top for a nutty aroma. We haven’t added any sesame oil or perilla oil because the flavor of the spicy tuna and the chili oil are sufficient on their own.

This finished spicy tuna kimchi stir-fry can be stored in an airtight container in the refrigerator, making it a long-lasting side dish. It’s delicious to use later as a filling for rice balls or to simply serve over warm rice. You can also plate it attractively alongside other side dishes like pan-fried tofu, pan-fried zucchini, or rolled omelets with pollack roe.
