Spinach and Bacon Fried Rice: ‘Taste of Discovery’ TV Show’s Baek Jong-won Recipe

Inspired by the Namhae spinach episode on the TV show ‘Taste of Discovery’, I decided to make Baek Jong-won’s signature spinach fried rice using ingredients readily available at home. This recipe is simple yet incredibly nutritious and delicious!
Ingredients
- 1 bunch fresh spinach
- 1/2 green onion (scallion)
- 3 strips thick-cut bacon
- 2 eggs
- 1/2 king oyster mushroom
- Pinch of salt
Cooking Instructions
Step 1
First, trim the tough ends of the spinach and wash it thoroughly under running water. Finely chop the green onion, separating the white and green parts if you prefer. Slice the king oyster mushroom into bite-sized pieces suitable for stir-frying.
Step 2
Chop the washed spinach into roughly 2-3 cm lengths. Cut the bacon strips into thin strips, similar to julienning. Crack the two eggs into a bowl and lightly beat them with a fork or whisk.
Step 3
Heat a wok or deep pan over medium heat and add a generous amount of cooking oil. Pour in the beaten eggs and stir gently to create scrambled eggs. Once the eggs are softly set, add the chopped green onions and stir-fry until fragrant.
Step 4
Add the sliced bacon to the pan and cook until it becomes slightly crispy and renders its fat. Once the bacon is cooked, add the sliced king oyster mushroom and stir-fry until all ingredients are evenly cooked. Season with a pinch of salt. (Be mindful of the bacon’s saltiness when seasoning.)
Step 5
When the ingredients in the pan are well-cooked, add a bowl of cooked rice. Break up any clumps of rice with your spatula and stir-fry until the rice is loose and slightly toasted. Finally, add the chopped spinach and stir-fry over high heat just until the spinach wilts and turns a vibrant green. Your delicious spinach fried rice is ready! You can add a sprinkle of black pepper to finish, if desired.
