Using the Cuckoo Twin Pressure cooker’s ‘Normal Pressure’ mode and ‘Open Cooking’ feature, you can easily create a nutritious and delicious spinach frittata. The Normal Pressure steam function gently cooks the ingredients, while the Open Cooking feature perfectly preserves the fresh texture and vibrant taste of cherry tomatoes. This recipe is a fantastic way to prepare a special brunch or meal with just one appliance.
Ingredients
- 4 large eggs
- 50g fresh spinach
- 2 strips bacon
- 4 cherry tomatoes
- 1 slice cheddar cheese
- 1 Tbsp Parmesan cheese
- 50g mozzarella cheese (or pizza cheese)
- 1/4 small onion
- 1 Tbsp melted butter
- 3 Tbsp milk
- 1/2 tsp salt
- Pinch of black pepper
Cooking Instructions
Step 1
Begin by preparing all your ingredients. Fresh vegetables and quality ingredients will contribute to the frittata’s delightful flavor.
Step 2
Wash the spinach thoroughly and pat it dry. Chop it into bite-sized pieces, about 2-3 cm long. Avoid chopping too finely to maintain a pleasant texture.

Dice the bacon into 1cm pieces and finely chop the onion. Halve the cherry tomatoes after removing their stems. Aim for similar sizes for even cooking.

In a large bowl, crack the eggs and whisk them gently until smooth. Stir in the milk, Parmesan cheese, melted butter, salt, and pepper. Mix until just combined, avoiding over-whisking. Preparing the egg mixture beforehand makes combining it with the vegetables easier.

Add the chopped spinach, bacon, onion, and mozzarella cheese to the egg mixture. Gently fold everything together until all ingredients are evenly coated with the egg mixture. Be careful not to overmix.

Lightly grease the inner pot of your Cuckoo rice cooker or wipe it with a paper towel to prevent sticking. Carefully pour the mixed frittata ingredients into the pot and spread them evenly.

Now, let the rice cooker work its magic! Close the lid and set the pressure knob to ‘Normal Pressure’ mode. You’ll see indicators for ‘Normal’ and ‘High’ pressure on the knob; simply turn it to your desired setting. Select the ‘Steaming (Normal Pressure)’ menu, set the cooking time to 30 minutes, and press the ‘Cook (Normal Pressure)’ button. This will cook the frittata gently.

Approximately 5 minutes before the cooking cycle is complete, press the ‘Open Cooking’ button if your rice cooker has this feature. When you hear the ‘Smart Cooking’ notification, carefully open the lid. (If your cooker doesn’t have this feature, you can skip this step and proceed to the next.)

With the lid open, evenly sprinkle the cheddar cheese over the frittata. Arrange the halved cherry tomatoes on top. The cheese will melt beautifully and bind the ingredients together.

Once the cooking cycle is finished, open the lid to reveal your perfectly cooked frittata. You’ll notice that the cherry tomatoes are still plump and intact, and the cheddar cheese has melted into a golden, appetizing layer. The Open Cooking feature ensures the vegetables retain their fresh texture.
