Broth Ingredients
  • 5 cups water
  • 2 Tbsp miso paste
  • 1 Tbsp gochujang (Korean chili paste)

Cooking Instructions

Step 1

First, pour 5 cups of water into a pot and dissolve 2 tablespoons of miso paste. Whisk thoroughly to prevent lumps. Gently stirring over low heat while dissolving the miso paste can help prevent clumping.

Step 2

For a richer and cleaner broth flavor, add 1 tablespoon of gochujang along with the miso paste and stir to combine. Gochujang adds a subtle depth and mild spiciness to the soup.

Step 3

To enhance the soup’s flavor profile, add 1 teaspoon of anchovy powder or 1 teaspoon of Dashida (beef flavor) and season accordingly. Using anchovy powder will impart a deeper, more refreshing taste.

Step 4

Prepare the spinach by removing any yellow or wilted leaves and washing it thoroughly under running water. It’s important to wash away any soil, especially from the root area.

Step 5

Once the broth begins to boil, add the prepared spinach, finely chopped green onions, and diagonally sliced green chili pepper.
