  • 2 handfuls spinach (approx. 100g)
  • 4-5 button mushrooms
  • 1 stalk green onion
  • 1/4 onion

Doenjang Seasoning
  • 1 to 1 1/3 Tbsp Doenjang (Korean soybean paste)
  • 1 tsp minced garlic
  • 0.5 Tbsp chopped green onion
  • 1 tsp Cheongju (Korean rice wine)
  • 1 tsp oligodang (corn syrup or similar sweetener)
  • 1 to 1 1/3 Tbsp sesame oil

Cooking Instructions

Step 1

First, briefly blanch the spinach in boiling water. After blanching, rinse the spinach under cold water, squeeze out any excess moisture thoroughly, and lightly season with salt and sesame oil. This preserves the fresh flavor of the spinach and allows it to meld well with the fried rice seasoning.

Step 2

Wash the button mushrooms under running water and slice them thinly. Finely dice the onion for a pleasant texture when stir-fried, and finely chop the green onion. You can also separate the white and green parts of the green onion if you like.

Step 3

Now, let’s make the delicious doenjang seasoning. In a bowl, combine the doenjang, minced garlic, chopped green onion, cheongju, oligodang, and sesame oil. Mix everything thoroughly. You can adjust the amount of oligodang to your preference for sweetness and savory depth.

Step 4

Heat a pan over medium-low heat, add a little cooking oil, and stir-fry the onion and mushrooms until they become translucent. Once the mushrooms release their aroma and the onions soften, proceed to the next step.

Step 5

Add the cooked onion and mushrooms, the prepared rice, and the lightly seasoned spinach to the pan. Stir-fry over medium heat for about 2-3 minutes. It’s important to stir-fry until the rice grains are distinct and not clumped together. Since the doenjang seasoning is quite flavorful, you likely won’t need to add extra salt to the rice. However, taste it and if it’s slightly bland, add just a tiny pinch of salt.

Step 6

Now it’s time to add the prepared doenjang seasoning. Add the seasoning to the pan and stir-fry for another 1-2 minutes, ensuring the rice and ingredients are evenly mixed. The savory aroma and taste of the doenjang will infuse the rice, creating a delicious fried rice.

Step 7
