Main Ingredients- 100g fresh wild chives (Dallae)

Step 1
Prepare all the ingredients needed for the Dallae Jang. Carefully trim the root ends of the wild chives and wash them thoroughly under running water to remove any dirt or debris. Wash the onion and green onion as well.
Step 2
Cut the cleaned wild chives into bite-sized pieces, about 2-3 cm long. Cutting them too long might prevent the seasoning from penetrating well, so aim for a suitable length.
Step 3
Finely mince the onion. The sweetness and umami from the onion will enhance the flavor of the Dallae Jang. It’s beneficial to drain the minced onion slightly by placing it in a sieve.
Step 4
Finely mince the green onion, similar to the onion. The fragrant aroma of the green onion will harmonize well with the wild chives, making the sauce even more delicious. You can use both the white and green parts of the green onion.
Step 5
In a bowl, combine 120ml of soy sauce, 3 Tbsp oligosaccharide, 3 Tbsp chili powder, 2 Tbsp mirin, a generous amount of toasted sesame seeds, and 1 Tbsp perilla oil. Mix well to create the seasoning base. The nutty aroma of perilla oil will further accentuate the fresh scent of the wild chives.
Step 6
Add the prepared wild chives, minced onion, and minced green onion to the seasoning base. Gently mix everything together until well combined. (Tip: Omitting garlic is key to preserving the natural, delicate flavor of the wild chives.) This Dallae Jang will develop a richer, more complex flavor over time as the ingredients meld together. While it’s delicious immediately, letting it rest in the refrigerator for about a day will allow the flavors to deepen further. It’s incredibly tasty served over warm rice or as a condiment for fresh vegetable salads!
