Before spring disappears, I picked up some seasonal Aster Scaber and Coastal Hogfennel from the supermarket, perfect for this time of year. Let’s make a deliciously seasoned salad with double the fragrance and top-notch flavor! It’s perfect as a side dish for rice or even as a snack with drinks!
Aster Scaber Salad Ingredients- 1 bunch Aster Scaber (from supermarket)
- 1/2 Tbsp minced garlic
- 1 Tbsp soup soy sauce (Guk-ganjang)
- 1/2 Tbsp anchovy sauce
- 1/2 Tbsp tuna extract
- 1 Tbsp sesame oil
- A pinch of sesame seeds
Cooking Instructions
Step 1
Prepare 1 bunch of fresh Aster Scaber purchased from the supermarket. Choosing fresh greens is the first step to a delicious dish!
Step 2
Bring a generous amount of water to a rolling boil in a pot, adding 1 teaspoon of salt. Adding a little salt to boiling water helps maintain the vibrant color of the greens and enhances their crisp texture.
Step 3
Once the water is boiling, add the Aster Scaber and gently stir. Blanch for only 20 to 25 seconds. Blanching for too long will make it mushy, so be sure to time it carefully. The fragrant aroma of the Aster Scaber should remain to ensure it tastes its best.
Step 4
As soon as the blanched Aster Scaber is removed from the boiling water, immediately rinse it under cold running water to cool it down. Rinsing in cold water helps preserve the crispness, and squeezing out excess water thoroughly will prevent the salad from becoming watery.
Step 5
To the squeezed Aster Scaber, add 1/2 Tbsp minced garlic, 1 Tbsp soup soy sauce, 1/2 Tbsp anchovy sauce, 1/2 Tbsp tuna extract, and 1 Tbsp sesame oil. Gently mix and knead the ingredients until well combined. Add sesame seeds at the end to finish. Adjust the seasoning to your preference to highlight the natural flavor of the greens.

Now, prepare 1 bunch of Coastal Hogfennel. Coastal Hogfennel leaves are typically thicker and have a slightly firmer texture than Aster Scaber.

Like the Aster Scaber, blanch the Coastal Hogfennel in boiling water with a pinch of salt, but for a slightly longer period of 35 to 40 seconds. Since it has a firmer texture, blanching it a bit longer will make it tender.
Step 8
Rinse the blanched Coastal Hogfennel in cold water and squeeze out excess moisture. Then, add 1/2 Tbsp minced garlic, 1/2 Tbsp red pepper paste, 1/2 Tbsp soybean paste, 1/2 Tbsp tuna extract, and 1 Tbsp sesame oil. Mix gently until the seasonings are well distributed, creating a savory and flavorful dressing. Finish with a sprinkle of sesame seeds for a delicious Coastal Hogfennel salad!
Step 9
After blanching, the volume of the greens reduces, resulting in about a handful of Aster Scaber and Coastal Hogfennel. Combining both greens in one bowl creates a visually appealing dish with a richer flavor profile. Enjoy this salad packed with the taste of spring!
