Ingredients- Aneori Namul 500g
- 1/2 paper cup of pancake mix (approx. 50g)
- 1/2 paper cup of water (approx. 100ml)
- Cooking oil, as needed
Cooking Instructions
Step 1
Wash the fresh Aneori Namul thoroughly under running water multiple times to remove any dirt or debris. Be gentle to preserve its natural aroma.
Step 2
Bring a pot of water to a rolling boil, then add the prepared Aneori Namul and blanch for about 5 minutes. This process reduces any slight bitterness and softens the texture, making it more enjoyable.
Step 3
Immediately after blanching, drain the Aneori Namul and rinse it under cold water to cool it down. This step helps to maintain its vibrant green color and a crisp texture.
Step 4
Using a clean cloth or your hands, gently squeeze out excess water from the Aneori Namul. Avoid squeezing too hard, as this can cause the leaves to become mushy.
Step 5
Chop the drained Aneori Namul into bite-sized pieces. For easier handling when making the pancake, aim for lengths of about 3-5 cm. If the stems are long, you can cut them in half lengthwise.
Step 6
In a large bowl, combine the chopped Aneori Namul with the pancake mix. Use a ratio of approximately 1:1 (Aneori Namul to pancake mix) and toss lightly to coat the namul evenly with the flour.

Gradually add water, a little at a time, mixing until you achieve a batter that is not too runny. The ideal consistency is one where the namul pieces are coated but not swimming in excess batter. When you lift a spoonful, it should flow slowly, not rapidly.

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Spoon portions of the batter onto the hot pan and fry until golden brown on both sides. Cooking over medium-low heat ensures the pancake cooks through without burning.

Once the first side is golden brown, carefully flip the pancake using a spatula and cook the other side until golden brown as well. If frying multiple pancakes, wipe the pan clean and add fresh oil between batches for a cleaner result.
