Ingredients- 5 fresh eggs (large eggs; use 6 for standard size)
- Approx. 1/5 of a pink sausage (Mortadella-style)
- A pinch of dried parsley flakes (or finely chopped green onions/scallions)
- Cooking oil, as needed
Cooking Instructions
Step 1
Take about 1/5 of the pink sausage and slice it very thinly. The thinner the slices, the more defined and beautiful the ‘blossom’ shapes will be.
Step 2
Using a small flower-shaped cookie cutter or a knife, carefully cut out flower shapes from the thinly sliced pink sausage. If you have leftover sausage, you can finely mince it and mix it into the egg mixture for added flavor and texture.
Step 3
Gently separate the yolks from the whites of 5 large eggs into two separate bowls. If you’re using standard-sized eggs, you might want to use 6. Whisk each part until smooth.
Step 4
To the egg whites, add a pinch of dried parsley flakes and mix well. If you don’t have parsley, finely chopped green onions or scallions can be substituted for a fresh, herby flavor.
Step 5
Lightly grease a non-stick skillet with cooking oil over low heat. Pour in the whisked egg yolks and spread them thinly to begin making the rolled omelet. Cook slowly to ensure even cooking.
Step 6
Once the yolk layer is cooked and rolled, gradually pour in the whisked egg whites, continuing to cook and roll. Pouring the white in batches will help create a layered omelet without it becoming too thick.
Step 7
When you have a little bit of the egg white mixture left, temporarily turn off the heat. Carefully arrange the pink sausage ‘blossoms’ onto the omelet. Pour the remaining egg white mixture over them and around them. Turn the heat back on low and continue to gently roll the omelet, shaping it as you go to embed the flowers.
Step 8
Once your beautiful blossom omelet is complete, remove it from the pan and let it cool slightly. Slice it into bite-sized pieces. While some people enjoy it with mustard, I found that ketchup pairs wonderfully with its subtle sweetness. Enjoy it your way!
