Main Ingredients
  • 6 heads of Spring Cabbage (Bomdong), washed and trimmed
  • A pinch of toasted sesame seeds (for garnish)

Seasoning
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1/2 Tbsp Fish Sauce
  • 1 Tbsp Soy Sauce (for soup, Guk-ganjang)
  • 1/2 Tbsp Vinegar
  • 1/2 Tbsp Minced Garlic
  • 1/2 Tbsp Ground Sesame Seeds
  • 1/2 Tbsp Sugar
  • 1/3 Tbsp Sesame Oil

Cooking Instructions

Step 1

Begin by thoroughly washing the spring cabbage under running water to remove any dirt or grit. Shake off excess water. Then, cut the cabbage into bite-sized pieces. Cutting them into manageable sizes will help preserve their crispiness.

Step 2

Let’s prepare the seasoning. In a small bowl, combine the gochugaru, fish sauce, soy sauce, vinegar, minced garlic, ground sesame seeds, and sugar. Mix them well until evenly incorporated. Set aside the sesame oil for later, as it will be added at the very end.

Step 3

Add the prepared spring cabbage to the bowl with the seasoning mixture. Gently toss the cabbage to ensure all the leaves are evenly coated with the seasoning. Be careful not to overmix, as this can bruise the cabbage and make it lose its fresh, crisp texture.

Step 4

Gently toss the cabbage with the seasoning until everything is well combined. Avoid vigorous mixing to maintain the cabbage’s crunch. Finally, drizzle in the sesame oil and give it one last gentle toss. This final step ensures the fragrant aroma of sesame oil permeates the salad beautifully.

Step 5

Transfer the freshly made Bomdong Geotjeori to a serving dish, piling it attractively. Sprinkle a pinch of toasted sesame seeds on top for an extra nutty flavor and visual appeal. This vibrant salad is now ready to be enjoyed with your favorite meals!
