- 1 spicy Cheongyang chili pepper

- 1/4 block firm tofu
Cooking Instructions
Step 1
Let’s get ready to make a special springtime dish that awakens your appetite: Wild Chive Doenjang Jjigae!
Step 2
First, let’s prepare the vegetables. Dice the onion into cubes (about 1.5cm) for even distribution in the stew. Slice the zucchini into similar-sized cubes. Cut the tofu into bite-sized cubes as well. Finely chop the green onion for a fragrant aroma. Thoroughly wash the wild chives under running water and then cut them into 1cm lengths. For a clearer broth, remove the seeds from the Cheongyang chili pepper before finely mincing it.
Step 3
Now it’s time to cook the stew. Pour 400ml of broth into a pot and add the diced onion and zucchini. Bring it to a boil over medium heat. Once the zucchini starts to become slightly translucent, add 2 tablespoons of doenjang and stir well until it dissolves completely, ensuring there are no lumps. Once it begins to boil, reduce the heat slightly.
Step 4
After the doenjang is well dissolved, let it simmer again. When the stew comes to a rolling boil, add 1/2 tablespoon of minced garlic and the minced Cheongyang chili pepper. Skim off any foam that rises to the surface with a spoon for a clearer and cleaner broth. Finally, taste the stew. If it’s not salty enough, add a little more doenjang or season with salt to your preference. Once the seasoning is just right, add the chopped wild chives and tofu, and simmer for a short while longer. Your delicious Wild Chive Doenjang Jjigae is ready!
