A Refreshing and Flavorful Spring Kimchi Made with Fresh Green Onions

I’ve made a delicious green onion kimchi using white porridge or cooked rice that you likely have at home. My husband absolutely loves it and can finish a whole bowl of rice with just this kimchi! Ingredients- 1 bunch fresh spring green onions (about 150g)
Seasoning- 1 cup white porridge or glutinous rice paste
- 4 Tbsp chili powder (gochugaru)
- 1 Tbsp plum extract (for sweetness and umami)
- 1 Tbsp minced garlic
- 2 Tbsp anchovy sauce (fish sauce)
- 1 Tbsp tuna extract (for added depth of flavor)
- 1 cup white porridge or glutinous rice paste
- 4 Tbsp chili powder (gochugaru)

Cooking Instructions
Step 1
Start by preparing the green onions. Thoroughly wash them under running water to remove any dirt or debris. Then, trim off any tough ends and cut the green onions into approximately 2-inch (5-6 cm) segments, dividing them into three equal parts. This makes them easier to mix and eat.

Now, let’s make the flavorful seasoning. In a blender, combine the white porridge or glutinous rice paste and blend until smooth. (If using cooked rice, add a little water to help it blend smoothly). In a bowl, combine the blended porridge with chili powder, minced garlic, anchovy sauce, tuna extract, and plum extract. Mix everything thoroughly with a spoon or whisk until well combined and there are no lumps. This creates a smooth and delicious seasoning paste. Using a homemade glutinous rice paste will add a lovely chewy texture.
Step 3
Place the cut green onions into a mixing bowl. Pour the prepared seasoning paste over the green onions. Gently toss and mix the green onions with the seasoning using your hands. Be careful not to handle them too roughly, as this can bruise the green onions and make them mushy. The goal is to coat every piece of green onion evenly with the flavorful paste.
