  • 3 Korean green chili peppers (Cheongyang)
  • 1 red chili pepper
  • 1/2 stalk green onion

  • 1 tbsp red chili flakes (Gochugaru)
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 1 tbsp toasted sesame seeds

The wild chives I’m using today are semi-wild, sourced from the Nak-an region near Suncheon. They look similar to green onions but have a much richer aroma and greater health benefits than regular wild chives. They’re perfect for this spring delicacy!

First, prepare the main ingredients for the wild chive sauce: one bunch of wild chives (about 50g), three Cheongyang chili peppers for a spicy kick, one red chili pepper for color, and half a stalk of green onion for added fragrance.

After cleaning the wild chives, thoroughly pat them dry. Then, finely chop them with a knife. It’s important to chop them evenly for the best texture and for the seasonings to penetrate well. Avoid chopping too coarsely.

Since this seasoning sauce will be used to mix with rice or top noodles, it’s best to chop the ingredients to a size where they provide a pleasant bite. Deseed the Cheongyang and red chili peppers before finely mincing them. Finely chop the green onion as well.

Now, let’s prepare the core seasoning ingredients for the sauce. Measure out: 1/2 cup (100ml) of soy sauce, 1/2 tablespoon of minced garlic, 1 tablespoon of red chili flakes (Gochugaru), 1 tablespoon of sugar, 1 tablespoon of aromatic sesame oil, and 1 tablespoon of toasted sesame seeds or sesame powder for that nutty flavor.

The addition of sesame oil and sugar will mellow out the flavors and add a wonderful umami depth. The balance of spicy, sweet, and savory notes will be perfect for stimulating your appetite.
