The bright weather outside beckons, but the current situation keeps us indoors. To bring the feeling of spring to my table, I’ve made a simple yet incredibly flavorful Minari (Water Parsley) salad. Ah, it truly feels like spring has arrived!

  • 1 tsp Guk-ganjang (Korean soup soy sauce) or regular soy sauce (for umami)
  • 1 tsp minced garlic (for aroma)
  • 1 Tbsp sesame oil (for richness)
  • 1 Tbsp toasted sesame seeds (for nutty flavor and texture)

Begin by inspecting your Minari for freshness. Trim off any dark or wilted roots. Place the Minari in a bowl of water briefly, then rinse thoroughly under running water, gently agitating to remove any dirt or debris. This ensures the Minari remains crisp and clean.

If your Minari stalks are long, you can separate them into stem and leaf portions for easier eating. However, if the Minari is shorter, you can simply blanch it whole without separating. Feel free to adjust based on the length and your preference.

Fill a pot with plenty of water and add a pinch of salt for blanching. Once the water comes to a rolling boil, add the prepared Minari and blanch it very briefly, for about 10 to 30 seconds. Be careful not to overcook, as it can become mushy and lose its lovely aroma.

Immediately after blanching, drain the Minari and rinse it under cold running water to stop the cooking process. Gently squeeze out excess water with your hands, and then cut the Minari into bite-sized pieces, typically about 3-4 cm long.

In a mixing bowl, combine the squeezed Minari with all the seasoning ingredients: 2-3 pinches of fine salt, 1 tsp Guk-ganjang (or soy sauce), 1 tsp minced garlic, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Gently toss everything together with your hands until the seasoning is evenly distributed. You can adjust the amount of salt to your taste. Adding a little more Guk-ganjang can enhance the savory notes.
