Cooking Instructions
Step 1
Let’s start preparing the ingredients for our colorful and healthy Bean Curd Rolls, reminiscent of springtime!
Step 2
First, bring a pot of water to a rolling boil. Add a pinch of salt to the water; this will help the bean curd sheets maintain a pleasant, slightly firm texture.
Step 3
Once the water is boiling, carefully add the bean curd sheets and blanch them for about 3 minutes until they become tender. Be cautious not to overcook them, as they might break apart! After blanching, rinse the sheets under cold water to stop the cooking and drain them thoroughly.
Step 4
Wash the aromatic perilla leaves thoroughly by dissolving a little baking soda in water to remove any residual pesticides. Gently pat them dry with paper towels. Ensuring the leaves are dry is crucial for successful rolling.
Step 5
Wash the fresh cucumber, remove the seeds, and julienne it into sticks about 0.5cm thick. Try to cut them into substantial pieces to maintain a satisfying crunch.
Step 6
Core the red and yellow bell peppers and julienne them into similar-sized sticks as the cucumber. These vibrant colors will add beautiful visual appeal to your rolls.
Step 7
Prepare the crab sticks by shredding them lengthwise into halves. This will help them integrate nicely within the roll without being too bulky.
Step 8
And there you have it! All the ingredients for your delicious Bean Curd Rolls are perfectly prepped. Doesn’t it look healthy and appetizing already?
Step 9
Now, let’s start rolling! Spread a blanched and drained bean curd sheet flat on your work surface. Place a perilla leaf on top, leaving a small margin at the front edge. This prevents sticking and adds a lovely fragrance.
Step 10
Arrange the julienned cucumber, bell peppers, and shredded crab sticks neatly over the perilla leaf. Concentrating the filling in the center will make rolling easier.
Step 11
Carefully start rolling the bean curd sheet from the bottom edge. Roll it tightly, ensuring the filling stays enclosed and doesn’t spill out. Gently roll it up like you would a sushi roll. Pay attention to the final edge to secure the roll. Congratulations, your healthy Bean Curd Rolls are ready!
Step 12
Let’s make a quick and flavorful dipping sauce! In a small bowl, combine the soy sauce, maple syrup, vinegar, and lemon juice. Whisk until well blended. For a spicy kick, finely mince the Cheongyang peppers and add them to the sauce. This adds a delightful heat that cuts through the richness. (You can omit the peppers if you prefer.)
Step 13
Slice the finished bean curd rolls into bite-sized pieces, about 2-3 cm thick, and arrange them attractively on a plate. The vibrant colors are truly inviting!
Step 14
Serve the rolls with the prepared spicy and tangy soy dipping sauce in a small dish on the side.
Step 15
Cut a roll in half to reveal the beautiful cross-section. Doesn’t the combination of fresh vegetables and soft bean curd look incredibly healthy and appealing? ^^
Step 16
For an extra touch, top with a little minced Cheongyang pepper, and dip generously into the soy sauce before enjoying! The delightful crunch of the vegetables, the soft bean curd, and the sweet and spicy sauce create a burst of flavor in every bite. Enjoy your meal!
