Essential Ingredients- 300g fresh strawberries
- 60g baby greens
- 200g somyeon (thin wheat noodles)
Cooking Instructions
Step 1
First, bring a generous pot of water to a rolling boil. Once boiling, add 1/2 Tbsp of salt. When the water is boiling again, add the somyeon noodles and cover the pot. Cook over medium heat until the noodles are done.
Step 2
As the noodles cook and the water starts to bubble up vigorously, pour in about 300cc of cold water. Cover the pot again and continue to boil until the noodles are cooked to your desired tenderness.
Step 3
After adding the cold water for the second time and bringing it to a boil, turn off the heat. Quickly drain the somyeon noodles. It’s crucial to rinse the noodles thoroughly under cold running water, scrubbing them gently with your hands until all the starch is removed and they feel squeaky. This step ensures the noodles are perfectly al dente and springy.
Step 4
Drain the well-rinsed noodles thoroughly in a colander. Once the excess water is removed, the somyeon is ready to be mixed with the delicious sauce.
Step 5
Now, let’s prepare the flavorful sauce! In a blender, add the 300g of strawberries and blend until smooth. To the pureed strawberries, add 2 Tbsp of plum extract, 1 Tbsp of sugar, 1/2 Tbsp of homemade soy sauce, and 1/3 tsp of salt. Stir everything together until well combined to create the sauce base.
Step 6
In a bowl, combine the drained somyeon noodles, 1 Tbsp of roasted sesame seeds, and 2 Tbsp of fragrant sesame oil with the prepared sauce. Gently toss everything together, ensuring the sauce coats the noodles evenly. The key is to mix gently to avoid breaking the noodles.
Step 7
Finally, arrange the fresh baby greens attractively in a serving bowl. Pile the carefully mixed strawberry bibim guksu generously on top. Your beautiful and delicious Strawberry Bibim Guksu is now complete, ready to be enjoyed with both your eyes and your palate!
