Hello everyone! I’m a homemaker who loves cooking that’s both budget-friendly and emotionally satisfying. I’ve created a weekly menu (1 dish a day) with duck as the theme. I hope it helps you with your meal planning. For Thursday’s dish, we have a duck that resembles the ‘ㅁ’ shape of Thursday… ♡ Square Kimbap!

Ingredients

  • 200g Smoked Duck
  • 1 Carrot
  • 1 Cucumber
  • 2 Eggs
  • 2 sheets of Gim (Seaweed for Kimbap)
  • 1 Tbsp Sesame Oil

Cucumber Brine

  • 1 Tbsp Vinegar
  • 1/2 Tbsp Sugar
  • 1/2 tsp Salt

Cooking Instructions

First, prepare all the ingredients needed for the recipe. Wash and get the vegetables ready.

Slice the smoked duck into bite-sized pieces (about 1cm thick). Heat a frying pan, add the duck, and cook until golden brown, rendering out the fat. Transfer the cooked duck to paper towels to absorb excess oil.

In the same pan, stir-fry the thinly julienned carrot until it becomes translucent. Be careful not to overcook, as it can become mushy.

Whisk the eggs and cook them thinly in the pan like a crepe. Once cooled, cut the egg crepe into quarters to create rectangular shapes, and then trim the edges slightly to make them closer to a perfect square.

Julienne the cucumber and soak it in the prepared brine (1 Tbsp vinegar, 1/2 Tbsp sugar, 1/2 tsp salt) for about 10 minutes. This will keep the cucumber crisp while adding flavor. Squeeze out any excess water before using.

In warm cooked rice, mix in 1 Tbsp sesame oil and a pinch of salt (or adjust seasoning to your preference). Mix well until evenly seasoned. It’s best to season the rice while it’s still warm so the flavors meld nicely.

Place the kimbap seaweed sheet shiny-side down. Make a cut with scissors from one edge, about 1cm away from the border, going only halfway towards the center. This single cut makes rolling easier.

Lay the seaweed on a bamboo mat. Spread a thin layer of seasoned rice over the seaweed, leaving a small border on the side where there isn’t a cut. Place the cooked smoked duck, stir-fried carrot, egg crepe, and brined cucumber in their respective sections on top of the rice.

Starting from the bottom-left corner, lift and fold the seaweed upwards, covering the ingredients. Ensure you hold the ingredients firmly to prevent them from spilling out.

Now, fold the section you just brought up from the left over to the right. Gently press down to compact the rice and shape the kimbap.

Finally, fold the top-right section down to cover the end of the seaweed sheet. This completes the formation of the square kimbap.

When you slice the square kimbap, you’ll see this beautiful cross-section forming a perfect square shape.

(Version 1) Here’s the completed square kimbap with the original ingredient combination! Doesn’t it look appetizing?

(Version 2) This time, we’ll try a different ingredient combination to create a square kimbap with a different flavor. For example, you could use pickled radish instead of cucumber, or ham instead of egg.
