The Secret to Flavorful Rice: Sweet Vinegar Dressing- 2 Tbsp rice vinegar
- 1 Tbsp sugar
- 1 tsp salt
- 2 Tbsp warm water (to dissolve sugar and salt)
- 2 Tbsp rice vinegar
- 1 Tbsp sugar
- 1 tsp salt
- 2 Tbsp warm water (to dissolve sugar and salt)
Cooking Instructions
Step 1
First, let’s prepare the refreshing vegetables. Halve the crisp green chilies lengthwise, remove the seeds, then cut them in half again to create thin strips. Thinly julienne the carrot as well.
Step 2
Gimbap-style ham adds a satisfying texture. Heat a frying pan and cook the ham strips until golden brown. Briefly place the cooked ham on paper towels to drain excess oil for a cleaner taste.
Step 3
Next, cook the fish cakes for a mild and chewy element. Lightly pan-fry the gimbap-sized fish cakes. A slight fry enhances their chewy texture and savory aroma.
Step 4
Now, we’ll stir-fry the carrots. Add 1 Tbsp of cooking oil to the pan, then add the julienned carrots and a pinch of salt (about 2 pinches). Stir-fry over medium heat until the carrots are slightly tender but still have a slight bite. Cut the imitation crab meat strips in half lengthwise.
Step 5
The heart of Gimbap is the seasoned rice! Place 3 cups of warm cooked rice in a bowl. In a separate small bowl, combine the sweet vinegar dressing ingredients: 2 Tbsp vinegar, 1 Tbsp sugar, 1 tsp salt, and 2 Tbsp warm water. Stir until the sugar and salt are completely dissolved. Pour this dressing over the rice, add 1 Tbsp of sesame oil, and gently mix with a spatula, being careful not to mash the rice grains, until the seasoning is evenly distributed.
Step 6
It’s time to roll your Gimbap! Place a sheet of gim (seaweed) shiny-side down on a bamboo rolling mat. Spread about 3/4 of the seasoned rice evenly over the gim, leaving a small margin at the top. Arrange the prepared fillings – chilies, carrots, imitation crab, pickled radish, burdock root, fish cake, and ham – horizontally across the rice.
Step 7
Here’s a tip for a neat roll: Gently press down on the fillings with your fingers to compact them into a single line. Starting from the bottom edge closest to you, lift the bamboo mat and roll the gim tightly over the fillings. Ensure the edge is tucked in firmly to prevent the fillings from spilling out.
Step 8
Finally, slice the Gimbap into bite-sized pieces for serving! To prevent sticking, slightly dampen your knife with water or cooking oil before slicing. Wiping the knife clean between cuts will ensure each piece is neat. Enjoy your delicious homemade Gimbap!
