Step 1
First, prepare a quarter of a cabbage into a manageable size for steaming. A medium-sized cabbage tends to steam better than a very large and dense one.

Trim off the hard core at the bottom of the cabbage with a knife. If the outer leaves are very dirty or damaged, feel free to remove them. However, leaving some outer leaves can help retain moisture during steaming, resulting in a moister finished dish.
Step 3
After trimming the core, rinse the whole cabbage head once under running cold water. Be careful not to wash too vigorously, as this can strip away nutrients. Immediately place the rinsed cabbage in your steamer. Here’s a tip: positioning the wider, flatter side of the cabbage facing downwards in the steamer will prevent the natural juices from escaping as it cooks, keeping it exceptionally moist and sweet.
Step 4
A steamer with a domed lid works best. Fill the bottom of the steamer with ample water and bring it to a rolling boil over high heat. Once steaming vigorously, carefully place the prepared cabbage into the steamer. Steam for exactly 5 minutes. Then, turn off the heat, close the lid, and let it sit for another minute to cook through with the residual steam. This method preserves a slight bite while ensuring tenderness. Finally, open the lid and remove the cabbage.

You can enjoy the cabbage as is, or adjust the steaming time to your preference for a softer texture. I steamed mine to retain a slight crunch. This steamed cabbage can be eaten plain or served with dipping sauces like ssamjang or soy sauce for a wonderful, healthy side dish.
