After the initial rinse, place the chestnuts in a bowl filled with plenty of water and dissolve 1 tablespoon of coarse salt. Soaking them in saltwater is a clever trick: any worm-eaten chestnuts will float to the surface, allowing you to easily remove them. If you missed any earlier, this method will help you find them. Scrub the chestnuts vigorously under the saltwater with your hands to ensure they are impeccably clean. You can steam chestnuts with their shells on, or cut them in half to eat later, so a thorough wash is always a good idea for hygiene.

Once cleaned, drain the chestnuts in a colander and let them sit for a moment to shed excess water.
