Steamed Perilla Leaves with Savory Seasoning
Incredibly Delicious Steamed Perilla Leaves
Place these steamed perilla leaves, warm and steamy, over a bowl of rice with their flavorful seasoning, and they simply melt in your mouth! A truly irresistible dish.
Main Ingredients
- 48 fresh perilla leaves
- 1/4 onion
- 1/4 green onion (white part mainly)
Seasoning Ingredients
- 5 Tbsp red pepper flakes
- 4 Tbsp soy sauce
- 2 Tbsp anchovy sauce (fish sauce)
- 1 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp sesame oil
- 1 Tbsp cooking oil
- 1 Tbsp sesame seeds
- 1 Tbsp plum syrup
- 5 Tbsp red pepper flakes
- 4 Tbsp soy sauce
- 2 Tbsp anchovy sauce (fish sauce)
- 1 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp sesame oil
- 1 Tbsp cooking oil
- 1 Tbsp sesame seeds
- 1 Tbsp plum syrup
Cooking Instructions
Step 1
First, wash the perilla leaves thoroughly under running water until all dirt is removed. Rinse them about 3 times to ensure they are completely clean. After washing, drain the leaves well on a colander.

Let’s prepare the delicious seasoning for the steamed perilla leaves. In a bowl, combine 5 Tbsp red pepper flakes, 4 Tbsp soy sauce, 2 Tbsp anchovy sauce, 1 Tbsp minced garlic, 1 Tbsp sugar, 1 Tbsp sesame oil, and 1 Tbsp sesame seeds for added nutty flavor. Mix everything together evenly to create the seasoning paste.
Step 3
Finely mince 1/4 onion. Also, finely chop about 1/4 green onion, focusing on the white parts. These finely chopped vegetables will add depth and richness to the seasoning.

Add the minced onion and green onion to the prepared seasoning paste. Mix thoroughly again until all ingredients are well combined. This step ensures a savory and flavorful seasoning for your perilla leaves.

Stack 4 to 5 perilla leaves neatly on top of each other. Arrange them loosely in a steaming pan or a pot. Using a wide pan or steamer will make this process easier.

Now, take spoonfuls of the prepared seasoning and spread it evenly over the stacked perilla leaves, making sure to cover them well. Gently spread the seasoning so that each leaf is coated.

Heat 1 Tbsp of cooking oil in a pan over low heat. Place the seasoned perilla leaves in the pan and cover with a lid. Cook slowly over very low heat to prevent burning. It’s important to keep an eye on them to avoid scorching.

Adding about 2 to 3 Tbsp of water around the edges of the pan will help keep the perilla leaves moist as they cook. Use a spatula to gently stir and loosen the leaves, being careful not to burn them.

Once they have cooked slightly, carefully flip the entire stack of perilla leaves over. Try to flip them all at once to maintain their shape.

After flipping, to ensure the seasoning penetrates evenly, spread any dripped seasoning from the edges and top back onto the leaves. Gently press down with the spatula to help the flavors meld together.

When the perilla leaves are tender and cooked through, turn off the heat. Sprinkle generously with sesame seeds for a final touch of aroma and flavor.
