Scallops are in season right now, and they’re incredibly fresh and delicious! I bought 1kg of fresh scallops and enjoyed them as steamed scallops and also added them to ramen. Eating seasonal scallops truly is a taste of heaven. This recipe will show you how to easily create a gourmet meal at home.

Steamed Scallops

  • 900g fresh scallops
  • 1 Tbsp sake (or cooking wine)

Scallop Ramen

  • 4 de-bearded scallops
  • 1 packet of ramen noodles (e.g., Yukgaejang ramen)

Cooking Instructions

To ensure the best freshness, rinse the scallops thoroughly under running water to remove any dirt on the shells. Then, prepare a saltwater solution by dissolving about 1 tablespoon of coarse salt in 1 cup of cold water. Submerge the scallops in this saltwater. Ensure they are fully covered. Cover the bowl with black plastic wrap or a lid to create a dark environment, and refrigerate for about 1 hour to de-beard them. This process helps to remove any grit and impurities from the scallops, resulting in a cleaner taste.

After de-bearding, gently rinse the scallops once more under cold water. This step removes any remaining sand or debris clinging to the shells, ensuring a cleaner cooking process.

Now, let’s steam the scallops. Pour about 2-3 cm of water into a pot. Add 1 tablespoon of sake (or cooking wine) to help eliminate any fishy odors and enhance the flavor. Place a steamer basket or rack over the pot. Bring the water to a boil and wait until steam rises. Once steam is actively rising, carefully arrange the cleaned scallops in the steamer basket. Cover the pot tightly with a lid and steam over medium heat for about 10 minutes. The scallops are cooked when their shells open wide. Be careful not to overcook them, as they can become tough.

Your perfectly steamed, tender, and succulent seasonal scallops are ready! Serve the scallops with their shells opened directly onto a plate while they are still warm for the best flavor. You can also serve them with a side of dipping sauce, such as spicy red chili paste sauce (gochujang-based) or soy sauce with wasabi, for an enhanced taste experience.
