Cooking Instructions
Step 1
First, let’s prepare the ingredients. Carefully trim any wilted or damaged parts from the bean sprouts. Soak them in cold water for about 10 minutes, then rinse thoroughly under running water. Drain them well and set aside in a colander. This helps keep the bean sprouts crisp and fresh.
Step 2
Chop the napa cabbage into large, bite-sized pieces. Cutting it large ensures it retains some texture even after steaming.
Step 3
Tear the oyster mushrooms apart by hand along their natural lines. Remove the tough stems and use the thinner parts for a tender bite.
Step 4
Slice the shiitake mushrooms thickly, after removing their stems. Their robust flavor will add depth to the dish.
Step 5
Trim the base of the enoki mushrooms and rinse them lightly under running water. Gently separate the strands and shake off any excess water. This prevents them from becoming mushy.
Step 6
Feel free to add other vegetables you have on hand, like bok choy or bell peppers and carrots. Using up leftover vegetables from your fridge is a great way to reduce food waste and enhance the flavor!
Step 7
In a deep pot, add a generous amount of water and place a steamer basket on top. Arrange the ingredients in layers: start with the napa cabbage at the bottom, followed by bean sprouts, other vegetables (onion, bok choy), mushrooms (oyster, shiitake, enoki), and finally, top with the smoked duck. Layering ensures even cooking.
Step 8
Lightly sprinkle salt and pepper over the smoked duck, then drizzle with 1 Tbsp of mirin. The mirin helps to eliminate any gamey smell from the duck, resulting in a cleaner taste. Cover the pot and steam over medium heat for about 15 minutes. The fat from the duck will render out, creating a moist and flavorful dish as it steams with the vegetables. (Medium heat / 15 minutes)
Step 9
While the duck is steaming, let’s make the fantastic ‘peanut sauce’ to dip it in! I highly recommend this sauce with steamed dishes and vegetables. It’s incredibly creamy and pairs wonderfully! Start by adding 1 Tbsp of soy sauce to a bowl.
Step 10
Next, add 2 Tbsp of peanut butter. Using a good quality peanut butter will result in a richer sauce flavor.
Step 11
Add 2 Tbsp of mayonnaise for a smooth, creamy texture. The combination of peanut butter and mayonnaise is simply divine!
Step 12
Stir in 1 Tbsp of honey for a touch of sweetness. You can substitute with corn syrup or other liquid sweeteners if preferred.
Step 13
Add 1 Tbsp of lemon juice for a hint of freshness. The lemon juice balances the richness and brightens the overall flavor of the sauce.
Step 14
If you like a bit of heat, finely chop some Korean green chili peppers and add them to the sauce. (Chili peppers are optional.) Combine all the ingredients and whisk until smooth and well-combined. Even at this stage, it’s already a delicious sauce!
Step 15
Once the smoked duck and vegetables are perfectly steamed, arrange them nicely on a plate. Dip the tender duck and crisp vegetables into the homemade creamy peanut sauce. The rich, nutty flavor and creamy texture are simply exquisite! This peanut sauce elevates the mild steamed dish with a burst of savory goodness. The addition of chili peppers in the sauce also cuts through any richness, making it incredibly addictive. This combination is highly recommended! ♥
Step 16
Behold the perfectly steamed ‘Low-Carb, High-Fat Smoked Duck with Bean Sprouts’! The fat has rendered out, leaving the duck tender and flavorful, while the vegetables are cooked to a perfect balance of crispness and tenderness. Often, stir-frying smoked duck can be messy with splattering oil and raise calorie concerns, right? However, steaming offers a cleaner and lighter way to enjoy it. This ‘Steamed Smoked Duck with Bean Sprouts’ is the ultimate diet meal – it’s delicious, healthy, and satisfying, allowing you to fill up without feeling heavy.
