  • 1/3 Tbsp Salted Shrimp (saeujeot)
  • A small amount of the green part of Spring Onion or Scallion

Prepare the Tomatoes: Slice off the top of each tomato, like a lid. Then, using a paring knife, carefully score around the inside edge of the tomato. Use a spoon to gently scoop out the inner flesh and seeds. Discard the seeds, and finely chop the tomato pulp. If the pulp is too sparse or mushy to scoop out easily, it’s best to use a different tomato.

Prepare the Filling: Finely mince the spring onions (or the green parts of scallions) and carrots. Mash the tofu, then place it on paper towels and squeeze out any excess water. In a large bowl, combine the minced spring onions, carrots, squeezed tofu, and salted shrimp. Mix well until all ingredients are evenly incorporated.
