We did lightly toast them in a dry pan first to eliminate any fishy smell. The result is a mildly seasoned, not-too-hard anchovy dish that’s perfect for adults. Ingredients

  • 3 cups small dried anchovies
  • 2 Korean green chili peppers (cheongyang peppers)
  • 1/2 Tbsp minced garlic

First, prepare 3 cups of small dried anchovies. Place the anchovies in a dry pan over medium-low heat and gently toast them for about 1-2 minutes, stirring constantly to prevent burning. This step helps to remove any fishy odor and enhances their nutty flavor.

Once toasted, place the anchovies in a sieve to shake off any crumbs and let them cool slightly. In a separate bowl, add 2 finely chopped Korean green chili peppers. Then, mix in 1/2 Tbsp minced garlic, 1 Tbsp soy sauce, 1 Tbsp plum extract, 1 Tbsp rice wine, 1 Tbsp sesame oil, and 1 Tbsp sesame seeds. Stir everything together well to create the dressing.
