  • 3 Korean Green Chili Peppers (Cheongyang peppers)

Prepare the vegetables first. Slice the red and yellow bell peppers into bite-sized pieces (about 2-3 cm), removing the seeds. If you prefer less heat, deseed the Korean green chili peppers before chopping them. Slice or roughly chop the onion.

Wash the bok choy thoroughly and trim the ends slightly. Blanch it in boiling water for about 30 seconds to 1 minute, just until it turns bright green and slightly tender. Be careful not to overcook it, or it will become mushy. Immediately drain and rinse under cold water to stop the cooking process. Squeeze out any excess water. In a bowl, gently toss the bok choy with a splash of fish sauce (or soy sauce), a drizzle of sesame oil, and sesame seeds. This method helps retain the bok choy’s crisp texture while adding a subtle savory flavor.

Heat a generous amount of vegetable oil in a wok or large skillet over high heat. Once the oil is hot, add the minced garlic and stir-fry for about 10 seconds until fragrant.
