You can leave them whole or slice them thinly. ▶ Slice the green onion diagonally into large pieces. Similarly, slice the chili peppers diagonally to distribute their spice. Cut the onion into thick slices, about 1 cm wide, for a pleasant texture.

▶ Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Add the sliced green onions and stir-fry slowly until fragrant and their sweetness infuses the oil, creating ‘scallion oil.’ This is a key step for building flavor. Once the green onions turn lightly golden, add the whole garlic cloves and stir-fry for another minute until their aroma is released. Be careful not to burn the garlic by adjusting the heat as needed.
