Ingredients
  • 1 bunch Korean chives (or garlic chives, about 150-200g)
  • 1/2 medium onion

Seasoning
  • 2 Tbsp red chili flakes
  • 2 Tbsp soy sauce
  • 1 Tbsp anchovy sauce
  • 1 Tbsp sesame oil (or perilla oil)
  • 1/2 Tbsp sugar
  • 1 Tbsp toasted sesame seeds (or crushed sesame seeds)

Cooking Instructions

Step 1

Prepare the star of the dish: Korean chives. These chives are shorter and thinner than regular chives, offering a tender texture that’s perfect for salads and seasoned side dishes.

Step 2

Rinse the chives thoroughly under running water. After washing, drain them well in a colander. This ensures the seasoning coats the chives evenly without becoming watery.

Step 3

Slice the onion thinly into matchsticks. To reduce its pungent and sharp flavor, you can soak the sliced onion in cold water for about 10 minutes and then drain, or chill it in the refrigerator before slicing. This also helps prevent your eyes from watering while you cut.

Step 4

Add the sliced onions to a mixing bowl.

Step 5

Add the drained chives and sliced onions to the bowl. Then, add all the seasoning ingredients (red chili flakes, soy sauce, anchovy sauce, sesame oil, sugar, and toasted sesame seeds). Gently mix everything together with your hands. Be careful not to overmix, as this can make the chives mushy. A gentle toss is key!

Step 6

Your delicious seasoned chives are ready! The vibrant red and fresh green colors are visually appealing, and the dish is packed with flavor and nutrition.

Step 7

Now, it’s time to enjoy the perfectly seasoned chives!

Step 8

This chive salad is an excellent accompaniment to grilled meats. Grill pork neck or pork belly, seasoned with salt and pepper, until golden brown and slightly crispy.

Step 9

Grilled meat is fantastic with any dish, but especially with this chive salad, which cuts through the richness and makes you want to keep eating! Get ready for a flavor battle!

Step 10

Create a bountiful ssam (wrap)! Place a generous portion of the seasoned chives on a bed of warm white rice, top it with a juicy piece of grilled meat, and wrap it all up for an incredible bite.

Step 11

Try a different combination! Grilled Spam or pink sausage can also be delicious when wrapped with chives and a perilla leaf. A dab of red chili paste enhances the flavor even further.

Step 12

Leftover seasoned chives can be enjoyed as a side dish for lunch the next day. They taste great on their own, or mixed into rice, or served with other dishes for a delightful twist. Have a wonderful day, everyone!
