  • 200ml Anchovy Broth (can be made with dried anchovies and kelp, or use a pre-made pack)

Seasoning Ingredients

  • 2 Tbsp Minced Garlic
  • 2 Tbsp Minced Green Onion
  • 2 Tbsp Soy Sauce (Jin Ganjang)
  • 2 Tbsp Soup Soy Sauce (Guk Ganjang)
  • 2 Tbsp Rice Wine (Mirin)
  • 2 Tbsp Oligodang (Korean syrup, adjust sweetness to taste)
  • 1 Tbsp Fish Sauce (Chamchi-aek or a similar fish sauce)
  • 3 Tbsp Perilla Oil
  • 1 Tbsp Sesame Oil

Cooking Instructions

Step 1

Begin by preparing 520g of tender, boiled dried radish greens. (Note: This is equivalent to approximately 130g of dried radish greens before boiling. For a method to boil them tenderly without peeling the outer skin, please refer to the link: @6974542.)

Step 1

Step 2

Cut the prepared radish greens into approximately 5cm lengths, making them easy to eat. This ensures the seasoning is evenly distributed and makes stir-frying more convenient.

Step 2

Step 3

Add all the prepared seasoning ingredients to the cut radish greens. (Minced garlic, minced green onion, soy sauce, soup soy sauce, rice wine, oligodang, fish sauce).

Step 3

Step 4

Gently mix and massage the greens with your hands to ensure the seasoning coats them evenly. Ensure the greens are well-coated and softened by the marinade.

Step 4

Step 5

Heat a frying pan over medium heat. Add the seasoned radish greens and pour in 200ml of anchovy broth. (You can make the broth by boiling a dried anchovy pack, or by simmering kelp and anchovies together for a richer flavor.)

Step 5

Step 6

Cover the frying pan and let it simmer until the broth has reduced by about half. This process further tenderizes the radish greens and allows the flavors to meld beautifully.

Step 6

Step 7

Once the broth has reduced, generously add 4 tablespoons of perilla powder. Adding perilla powder significantly enhances the nutty aroma and flavor.

Step 7

Step 8

After adding the perilla powder, quickly stir to combine it with the radish greens, then immediately turn off the heat. Overcooking after adding perilla powder can diminish its aromatic qualities.

Step 8

Step 9

Finally, drizzle 1 tablespoon of sesame oil over the dish. This final touch adds an extra layer of rich, nutty flavor, making the stir-fried radish greens even more delicious.

Step 9

Step 10

And there you have it! A wonderfully tender and savory stir-fried dried radish greens with perilla powder. Enjoy this healthy and delicious dish, perfect as a daily side or a festive addition to any meal!
