Step 1
We’re going to make a delicious stir-fried dried shredded squid dish, which is perfect for lunchbox side dishes or as a general Korean banchan (side dish).
Step 2
Prepare the dried shredded squid. It’s best to cut it into bite-sized pieces, about 5-7 cm long, according to your preference. Cutting it this way helps the seasoning penetrate better and makes it easier to eat. Once cut, toss the shredded squid with 1 tablespoon of cooking oil. This prevents it from sticking together while stir-frying and adds a lovely toasted flavor.
Step 3
In a bowl, combine 1 tsp soy sauce, 1 tsp oligosaccharide, a pinch of whole sesame seeds, and 1 tsp sesame oil to make the seasoning sauce. You can use corn syrup or sugar instead of oligosaccharide, but oligosaccharide gives a better sheen and is less sticky. Add plenty of sesame seeds for a rich, nutty aroma.

Now for the stir-frying process. Heat a frying pan over low heat. Add the shredded squid that you tossed with oil and stir-fry gently to prevent burning. Stir-frying for about 2-3 minutes will dry out some of the moisture, enhancing the chewy texture. Transfer the stir-fried squid to a separate plate for a moment. Then, in the same frying pan, add the prepared seasoning sauce and bring it to a simmer over low heat. As soon as the sauce starts to bubble, turn off the heat immediately. If you continue to cook over direct heat, the sauce can burn very quickly. After turning off the heat, return the stir-fried shredded squid to the pan. Use the residual heat to quickly mix everything together, ensuring the seasoning coats the squid evenly. This method prevents burning and results in a delicious stir-fried dried shredded squid.
