Ingredients

  • 120g Korean hot peppers (kwari gochu)
  • 50g dried small shrimp (bori saeu)
  • 1 Tbsp oyster sauce
  • 6 Tbsp soy sauce
  • 3 Tbsp oligosaccharide (or corn syrup)
  • 0.5 Tbsp minced garlic
  • 1 Tbsp cooking oil
  • 100ml water
  • 0.5 Tbsp sesame seeds

Cooking Instructions

Step 1

First, wash the Korean hot peppers thoroughly under running water. Remove the stems. Then, using a toothpick, prick each pepper about three times. This step is crucial as it allows the sauce to penetrate the peppers, making them more flavorful and tender when cooked.

Step 1

Step 2

Heat a frying pan over medium heat and add the prepared Korean hot peppers along with 1 tablespoon of cooking oil. Sauté the peppers for about 2-3 minutes, just until they begin to soften slightly. Be careful not to use heat that is too high, as the peppers can burn easily.

Step 2

Step 3

Now, it’s time to add the seasoning. Pour in 1 tablespoon of oyster sauce, 6 tablespoons of soy sauce, and 100ml of water. Reduce the heat to medium-low and let the peppers simmer and absorb the flavors of the sauce.

Step 3

Step 4

As the sauce begins to reduce, add 0.5 tablespoon of minced garlic. Continue to stir-fry over medium-low heat until most of the liquid has evaporated, allowing the garlic to infuse its aroma and flavor into the dish.

Step 4

Step 5

Once the liquid has significantly reduced, add the 50g of dried small shrimp. Stir-fry the shrimp with the peppers and sauce for a minute or two, ensuring they are coated and lightly toasted.

Step 5

Step 6

Finally, add 3 tablespoons of oligosaccharide (or corn syrup) to the pan. Stir-fry quickly to coat everything evenly. The oligosaccharide will add a pleasant sweetness and a glossy finish to the dish.

Step 6

Step 7

Turn off the heat and sprinkle 0.5 tablespoon of sesame seeds over the stir-fry. Gently toss everything together using the residual heat to distribute the sesame seeds and enhance the nutty aroma.

Step 7

Step 8

And there you have it – a delicious and savory stir-fried dish of Korean hot peppers and dried shrimp! Enjoy this flavorful side dish that’s perfect with a bowl of rice.
