Here’s a simple and quick recipe for stir-fried eggplant, Baek Jong-won style, that’s sure to be a hit with your rice!

Main Ingredients

  • 3 eggplants
  • 1/2 green onion
  • A pinch of sesame seeds
  • 3 Tbsp cooking oil (using a tablespoon for rice)

Seasoning

  • 2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 2 Tbsp oligosaccharide
  • 1 Tbsp sesame oil

Cooking Instructions

First, trim the stem ends off the eggplants. Soak them briefly in water with a splash of vinegar, then rinse thoroughly. This step helps remove any bitterness and enhances the crisp texture. After washing, cut the eggplants in half lengthwise, then slice them diagonally into bite-sized pieces (about 1cm thick).

Finely mince 1/2 green onion. Heat 3 tablespoons of cooking oil (measured with a tablespoon) in a pan with some depth over medium-low heat. Add the minced green onion and stir-fry until it becomes golden and fragrant, creating delicious scallion oil. Sautéing the green onion sufficiently is key for flavor.

Once the scallion oil is ready, add the prepared eggplant slices to the pan. Don’t worry if it looks like a lot of eggplant at first; it will shrink considerably as it cooks.

Continue to stir-fry the eggplant over medium heat. As you stir and spread the eggplant out in the pan, you’ll notice it quickly wilting and becoming tender.
