  • 1.5 Tbsp mirin (rice wine)
  • 1 Tbsp corn syrup
  • 0.5 Tbsp oyster sauce
  • 2 Tbsp water

Scallion Oil Base

  • 2 Tbsp minced scallions
  • 1 Tbsp cooking oil

Cooking Instructions

First, let’s make the delicious sauce! In a small bowl, combine 2 Tbsp sugar, 3 Tbsp soy sauce, 1.5 Tbsp mirin, 1 Tbsp corn syrup, 0.5 Tbsp oyster sauce, and 2 Tbsp water. Stir well until the sugar is completely dissolved. This golden ratio sauce is the key to the dish’s flavor!

Time to prepare the main ingredients! Trim the ends of the oyster mushrooms, rinse them lightly under running water, and then tear them into bite-sized pieces with your hands. Rinse the square fish cakes under running water to remove any debris, then cut them into strips about 1.5 cm wide, or into bite-sized squares. Feel free to cut them into your preferred shape.

Now, heat 1 Tbsp of cooking oil in a pan over medium-low heat. Add 2 Tbsp of minced scallions and fry them gently until they turn golden brown and aromatic, creating a fragrant scallion oil. Once the scallions are golden, immediately add the torn oyster mushrooms. Turn the heat up to high and stir-fry quickly for about 1 minute, until the mushrooms are slightly wilted and lightly browned. This step enhances the mushroom’s flavor.
