Stir-Fried Garlic Scapes and Tofu

I’ve stir-fried seasonal garlic scapes with tofu. Serve it like a rice bowl, and you’ll finish a whole plate of rice in no time! It’s a versatile dish that works perfectly as a main side or even as a substitute for ssamjang (Korean dipping paste) when wrapped in lettuce.

Main Ingredients

  • 5-6 stalks fresh garlic scapes
  • 1 block firm tofu (approx. 300g)
  • 1 medium onion
  • 1/2 medium carrot

Seasoning

  • 2 Tbsp olive oil
  • 2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp oligodang (corn syrup/oligosaccharide)
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, prepare the block of tofu. Crumble the tofu using your hands into bite-sized pieces. Aim for a slightly coarse texture rather than making it completely smooth, as this will enhance the mouthfeel.

Wash the fragrant garlic scapes thoroughly, pat them dry, and then finely chop them into approximately 0.5cm pieces. The slightly pungent aroma of the garlic scapes will add wonderful flavor to the dish.

Peel the carrot and dice it very finely. This adds a delightful crunch. Cutting the carrot into very small pieces will ensure it cooks quickly and evenly.

Peel and finely dice the onion, similar in size to the chopped carrot. The natural sweetness of the onion will blend beautifully with the other ingredients, enriching the overall flavor profile.

Now, let’s start stir-frying! Heat a pan over medium-low heat and add 2 tablespoons of olive oil. Add the chopped garlic scapes first and stir-fry for about 30 seconds until their fragrance is released.

Once the garlic scapes are fragrant, add the finely chopped carrot and onion. Stir well to combine all the ingredients and stir-fry over high heat for 1-2 minutes, until the vegetables become slightly translucent. Stirring constantly is key here.

When the vegetables are partially cooked, add the crumbled tofu. Then, add all the prepared seasoning ingredients: 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 2 tablespoons gochugaru, and 2 tablespoons oligodang. Mix thoroughly to ensure the seasoning coats everything evenly.

Continue to stir-fry over high heat for about 3 minutes, allowing all the flavors to meld together beautifully. Make sure to keep stirring to prevent the sauce from sticking to the bottom of the pan. Finally, turn off the heat and sprinkle with 1 tablespoon of toasted sesame seeds. This delicious stir-fried garlic scapes and tofu is now ready! It’s wonderful served over a bowl of warm white rice, or enjoy it wrapped in lettuce leaves instead of ssamjang.
