Stir-Fried Garlic Scapes with Soy Sauce: Quick & Easy Recipe without Boiling

Hello everyone! Today, we’re going to make delicious stir-fried garlic scapes with soy sauce using fresh, seasonal garlic scapes. I made a special dish with the garlic scapes my mother bought from the traditional market! Garlic scapes can have a slightly pungent taste if not cooked enough, and it can take a long time to cook them thoroughly in a pan. While blanching in boiling water is common, today I’ll share a recipe that achieves a similar effect to blanching right in the pan, making it quick and easy. The crisp texture and the savory-sweet sauce are perfect as a side dish with rice!
Key Ingredients- 1 bunch fresh garlic scapes
- 1/4 cup water (approx. 50ml)
- Pinch of salt
- 2 Tbsp cooking oil (30ml)
- 4 Tbsp soy sauce (60ml)
- 2 Tbsp oligosaccharide (30ml)
- 1 Tbsp sesame oil (15ml)
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
First, wash the garlic scapes thoroughly under running water. It’s important to wash them carefully to remove any dirt or debris. Once clean, cut the garlic scapes into bite-sized pieces, about 4-5 cm long. It’s best to trim off the flower bud part at the end of the scapes, as it can be tough or bitter.
Step 2
Pour 1/4 cup of water into a heated frying pan. Then, add the cut garlic scapes to the pan. Adding a little water like this helps prevent the garlic scapes from burning and gives them a blanched effect, preserving their crispness.
Step 3
Add a pinch of salt to help the garlic scapes cook to a crisp, vibrant green. (Salt, to taste) Stir-fry over medium-high heat until all the moisture evaporates from the garlic scapes. Stir occasionally to ensure even cooking. As the water evaporates, the flavor of the garlic scapes becomes more concentrated and their crispness is enhanced.
Step 4
Once most of the moisture has evaporated from the pan, add 2 tablespoons of cooking oil and stir-fry the garlic scapes again to coat them evenly with oil. When the garlic scapes start to glisten, pour 4 tablespoons of soy sauce along the edge of the pan. Mix well to ensure the soy sauce flavors the garlic scapes.
Step 5
To add sweetness, add 2 tablespoons of oligosaccharide and mix it in, stir-frying quickly once more. Oligosaccharide adds shine and also helps prevent the sauce from burning. Stir-fry briskly to combine all the ingredients well.
Step 6
Turning off the heat is the key! Now, turn off the stove and add 1 tablespoon of sesame oil for a rich aroma. Adding sesame oil after turning off the heat prevents the fragrant oil from evaporating and allows it to be absorbed into the dish.
Step 7
Transfer the delicious stir-fried garlic scapes to a serving plate. Finally, sprinkle generously with toasted sesame seeds for added nutty flavor and visual appeal, completing this tasty soy sauce marinated garlic scape dish. Enjoy this rice-stealing side dish!
