Stir-fried Imitation Crab, Tofu, and Potato Delight

Introducing a delicious imitation crab, tofu, and potato stir-fry recipe that kids absolutely adore for its soft texture and subtly sweet flavor. It’s so easy to make, even on busy days!
Main Ingredients- 3 medium potatoes
- 2 sticks of imitation crab (surimi)
- 150g firm tofu (or silken tofu)
- 2 Tbsp cooking oil
- 0.3 tsp salt
- 1 tsp soy sauce
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
First, peel the potatoes thoroughly and then finely dice them, almost as if mincing. You can also cube or julienne them, but smaller pieces are better for younger children.

Place the diced potatoes in a microwave-safe bowl. Add just enough water to lightly cover the potatoes. Be careful not to add too much water, as this can make the potatoes mushy.
Step 3
Microwave for about 2 to 3 minutes. The goal is to slightly soften the potatoes, not to cook them completely, as they will continue to cook while stir-frying.
Step 4
After microwaving, drain the potatoes thoroughly using a sieve. Any remaining moisture can be evaporated during the stir-frying process.

Finely chop the imitation crab sticks into pieces similar in size to the diced potatoes. Ensure they are not too long so your child can eat them easily.

Heat a non-stick pan over medium heat without any oil. Add the tofu and mash it with your spatula as you cook. Continue to cook until most of the moisture has evaporated from the tofu. This step enhances its nutty flavor and firm texture.

Once the tofu appears dry and crumbly, add the 2 tablespoons of cooking oil to the pan. Stir and cook until the oil is well incorporated with the tofu.

Now, add all the pre-cooked potatoes to the pan. Stir-fry until the potatoes are lightly golden and cooked through. Remember to stir occasionally to prevent sticking.

When the potatoes are fully cooked, add the chopped imitation crab. Stir-fry gently for just a minute or two. Overcooking imitation crab can make its texture chewy.

Season the stir-fry with 0.3 teaspoons of salt. Adjust the seasoning to your child’s preference, keeping it mild for little ones.
