Ingredients

  • 700g King Oyster Mushrooms
  • 150g Beef (for Bulgogi)
  • 1/2 Onion
  • 1/4 Carrot
  • 5 Scallions (green onions)
  • 1 tsp Salt
  • 2 pinches Black Pepper
  • 1 tsp Toasted Sesame Seeds
  • 1/2 Tbsp Sesame Oil

Beef Marinade

  • 1/2 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 1/4 tsp Black Pepper
  • 1 tsp Sesame Oil

Cooking Instructions

First, trim off the tough bottom part of the king oyster mushrooms and clean them thoroughly.

Bring a pot of water to a boil, adding 1/2 Tbsp of salt. Once boiling, add the prepared mushrooms and blanch them on high heat for about 2 minutes. (This step enhances the mushroom’s chewy texture!)

Immediately rinse the blanched mushrooms under cold running water to cool them down. Gently squeeze out excess water by hand. Be careful not to squeeze too hard, as this can break down the mushroom’s texture.

Separate the white and green parts of the scallions. Finely chop the white parts and cut the green parts (leaves) into approximately 2cm lengths.

Slice the onion and thinly slice or julienne the carrot. Carrots take longer to cook than other vegetables, so slicing them thinly is recommended. Tear the king oyster mushrooms into bite-sized pieces (about 2-3 sections each).

In a bowl, combine the prepared king oyster mushrooms with 1 tsp of salt and 2 pinches of black pepper. Gently toss to marinate.

Pat the beef dry with paper towels to remove excess moisture. In a separate bowl, combine the beef with all the marinade ingredients (1/2 Tbsp soy sauce, 1 Tbsp minced garlic, 1/4 tsp black pepper, 1 tsp sesame oil) and mix well to marinate.

Heat 1.5 Tbsp of cooking oil in a frying pan over medium heat. Add the chopped white parts of the scallions and stir-fry for about 30 seconds until fragrant, creating scallion oil. This will add a wonderful aroma.

Add the marinated beef to the pan and stir-fry, breaking it apart with chopsticks, until it’s no longer pink and the surface is cooked through. This is an important step for tenderness.

Once the beef is partially cooked, add the sliced carrots and onions. Stir-fry over high heat for about 1 minute and 30 seconds, or until the vegetables are slightly tender.

Now, add the marinated king oyster mushrooms to the pan. Stir-fry everything together for about 3 more minutes, ensuring the mushrooms are cooked until tender.

Finally, add the chopped green parts of the scallions, 1 tsp of toasted sesame seeds, and 1/2 Tbsp of sesame oil. Give everything a final toss to combine. Your delicious stir-fried king oyster mushrooms with beef are now ready to be enjoyed with a warm bowl of rice!
