  • 1 pack (approx. 200g) mini king oyster mushrooms
  • 1/2 bunch (approx. 100g) chives

Seasoning & Stir-fry

  • 1/2 tsp herb salt (or a pinch of salt and pepper)
  • 1 tbsp olive oil

Cooking Instructions

To ensure the best flavor and texture, it’s great to start with fresh ingredients. I particularly like the mini king oyster mushrooms from ‘Hansalim’ because they are exceptionally fresh. Prepare your mini king oyster mushrooms and fresh chives.

Cut the chives into approximately 5cm (about 2-inch) lengths. Slice the mini king oyster mushrooms to a similar size. Cutting them into bite-sized pieces will ensure they cook evenly and quickly.

Heat 1 tablespoon of olive oil in a wok or a deep pan over medium heat. Add the sliced mini king oyster mushrooms and begin to stir-fry. Season with 1/2 teaspoon of herb salt (or regular salt and pepper if you don’t have it). Herb salt adds a lovely aromatic flavor, so I highly recommend it! Sauté until the mushrooms release some moisture and begin to turn golden brown.

Once the mushrooms are almost cooked through, immediately turn off the heat! Add the pre-cut chives to the pan. Chives cook very quickly and can become mushy and lose their vibrant color if overcooked, so adding them at the very end is key.

Using the residual heat from the pan, gently toss the chives with the mushrooms for about 10-20 seconds, just until they are slightly wilted but still retain their crispness and fresh aroma.
