Cooking Instructions
Step 1
I picked up these fresh king oyster mushrooms, which were on a buy-one-get-one-free special at the market! This generous amount means everyone in the family can enjoy this delicious dish.
Step 2
Trim any dirt from the base of the king oyster mushrooms and lightly rinse them under running water. You can cut them into any shape you prefer, but today, I’ll cut them in half lengthwise and then into uniform slices. This way of slicing enhances their chewy texture.
Step 3
I’m using green onion that was stored in the freezer, chopped into bite-sized pieces. Using fresh green onion would add an even more fragrant aroma.
Step 4
Slice the green and red chilies to a similar size as the green onion. If chili seeds get into the dish, it can look messy, so removing them by soaking the chilies in cold water first will result in a cleaner-looking dish.
Step 5
Heat a pan, add 1 tablespoon of perilla oil, and then add 1 tablespoon of minced garlic. Sauté over medium-low heat until the garlic becomes fragrant. Be careful not to burn the garlic; a gentle sauté is key.
Step 6
Add the sliced king oyster mushrooms to the pan and lightly season with salt. Stir-fry over medium heat, stirring frequently to prevent the garlic from burning and to ensure even cooking. The mushrooms will naturally release moisture as they cook, becoming tender.
Step 7
Once the king oyster mushrooms have softened and wilted, add the prepared green onion and chilies, and continue to stir-fry them together.
Step 8
Finally, add 1 tablespoon of oyster sauce to adjust the seasoning. The oyster sauce will enhance the umami flavor of the king oyster mushrooms.
Step 9
Turn up the heat to high and stir-fry quickly until the liquid has evaporated. Sprinkle with toasted sesame seeds at the end for a more appetizing finish. Your delicious stir-fried king oyster mushrooms are ready!
Step 10
Enjoy the wonderfully chewy texture of these stir-fried king oyster mushrooms! Personally, I think mushrooms are one of the most delicious foods after meat. I hope you try making this dish!
