Main Ingredients

  • 1 pack King Oyster Mushrooms (or similar), torn into bite-sized pieces
  • 2 Shiitake Mushrooms, thinly sliced
  • 1 bunch Chives, cut into 1.5-inch lengths

Cooking Instructions

Step 1

First, prepare the mushrooms. Rinse the king oyster mushrooms under running water and tear them into bite-sized pieces. Remove the stems from the shiitake mushrooms and slice them thinly. Blanch the prepared mushrooms in boiling water for a short time. (Tip: You can use any type of mushroom you like, but using a combination of king oyster and shiitake mushrooms will add richer texture and aroma!)

After blanching, drain the mushrooms thoroughly by squeezing out excess water with your hands. If there’s too much water, the seasoning might become diluted. In a bowl, combine the squeezed mushrooms with minced garlic, soy sauce, and onion extract (or corn syrup), and gently mix to marinate.

Heat a pan over medium-low heat and add the sesame oil. Add the marinated mushrooms and stir-fry until the moisture evaporates and the seasoning is well absorbed. Taste and adjust the seasoning with a pinch of salt or a little more soy sauce if needed.

Once the mushrooms are partially cooked, add the chives, cut into approximately 1.5-inch lengths, and stir-fry quickly over high heat. It’s important to cook the chives briefly until they turn bright green, as they can become mushy if overcooked. Just before turning off the heat, sprinkle generously with sesame seeds and black sesame seeds for a nutty finish. Your delicious stir-fried mushrooms and chives are ready!
