First, let’s prepare the scallions. Briefly blanch them in lightly salted boiling water. Be careful not to overcook, as they can become mushy. Rinse the blanched scallions under cold water, squeeze out excess moisture thoroughly, and cut them into finger-length pieces. Next, lightly blanch the three types of mushrooms (Baekseon, Sunjeong, Gonji) in boiling water as well. Rinse them under cold water and squeeze out as much moisture as possible. Pre-blanching helps achieve a better texture later.

Now, let’s make delicious bacon-wrapped mushroom rolls! Place a portion of the blanched mushrooms and scallions onto a slice of bacon and roll it up tightly. Lightly grease a pan and heat it over low heat. Place the bacon rolls in the pan and cook slowly until the bacon is golden brown and the filling is heated through. Cooking on low heat prevents burning and ensures even cooking.

Prepare dipping sauces that will enhance the flavor of the mushroom stir-fry. Serve spicy and sweet chili sauce alongside a grainy mustard sauce in small bowls for an appealing presentation and delightful taste. You can also choose other sauces according to your preference.

While the noodles soak, prepare the other ingredients. Soak the dangmyeon (Korean sweet potato noodles) in lukewarm water for about 30 minutes until softened. Once soaked, cut the noodles into bite-sized pieces. (Tip: Rinsing the noodles under cold water after boiling can give them a chewier texture.)

Let’s make the egg garnish. Whisk the 2 eggs thoroughly and pour them into a lightly oiled pan to make thin omelets. Once cooled, slice them into thin strips. Thinly slice half an onion and stir-fry it in a pan with a little cooking oil over medium-low heat. Season lightly with salt and pepper as the onion becomes translucent. This sautéed onion adds sweetness and depth of flavor.

Now it’s time to combine everything! In a large bowl, add the soaked dangmyeon, the pre-blanched mushrooms (Baekseon, Sunjeong, Gonji), shredded carrot, and bean sprouts. Add 3 Tbsp soy sauce, 1 Tbsp sugar (or corn syrup), 1 Tbsp minced garlic, and 1 Tbsp sesame oil. Mix everything well until evenly coated. (Tip: Adjust the amount of soy sauce and sugar to your taste.) Finally, top with the julienned egg garnish for a beautiful presentation. Your delicious Three-Color Mushroom Stir-Fry is ready!

Here’s an alternative method where we stir-fry everything directly in the pan. Heat 5 Tbsp of cooking oil in a pan and add the sliced onion, stir-frying over medium heat. Once the onion starts to look translucent, add the prepared mushrooms, bean sprouts, and shredded carrot, stir-frying together. Using a variety of vegetables will make the dish richer. Stir-fry the vegetables quickly before they lose their crispness to maintain a pleasant texture.

Let’s add the final flavors! Add a pinch of salt to the stir-frying vegetables, then add 80g of Doenjang (fermented soybean paste) for a spicy kick and rich umami. Stir well and continue to cook until the paste is fully incorporated with the vegetables. Cooking the doenjang enhances its flavor, so ensure it melds well with the ingredients. This is where the perfect balance of sweet and savory is achieved!
