Stir-Fried Onions: Sweet & Spicy
Deliciously Sweet Stir-Fried Onions!
One bowl of rice disappears in an instant with just this stir-fried onion side dish! It’s delightfully sweet and a little spicy, making it the perfect accompaniment to any meal. Absolutely delicious! ^^
Ingredients- 2 medium onions
- 3 Cheongyang peppers (Korean chili peppers)
- 1/2 Tbsp oligosaccharide (or corn syrup)
- 1/2 Tbsp gochugaru (Korean chili flakes)
- 1+1/2 Tbsp oyster sauce
- Sesame seeds, for garnish
- Cooking oil
Cooking Instructions
Step 1
First, peel and wash the onions. Slice them lengthwise into about 0.5 cm thick strips. For the Cheongyang peppers, remove the stems, cut them into quarters, and then mince them finely. (If you prefer it spicier, keep the seeds; if you want it milder, remove the seeds.)
Step 2
Heat a generous amount of cooking oil in a pan over high heat. Add all the sliced onions to the pan. Maintaining high heat is crucial at this stage.
Step 3
Once the onions begin to soften slightly, add 1/2 Tbsp oligosaccharide, 1/2 Tbsp gochugaru, and 1+1/2 Tbsp oyster sauce. Stir-fry everything together until the seasonings are well combined. (The amount of oligosaccharide can be adjusted to your sweetness preference.)
Step 4
Quickly stir-fry the mixture again to ensure the sauce coats the onions evenly. Stir-frying rapidly over high heat prevents the onions from releasing too much water and helps concentrate their flavor.
Step 5
Next, add the minced Cheongyang peppers and stir-fry for another 30 seconds or so. The fresh aroma and spiciness of the peppers will enhance the overall flavor profile.
Step 6
Onions can become mushy if overcooked, so the key to retaining their crisp texture is to stir-fry them quickly over high heat. Once done, sprinkle with sesame seeds for a nutty finish. Enjoy this delicious side dish with warm rice!
