Cooking Instructions
Step 1
We’re using ‘Hyopork’s ‘Geuttae Geu Moksal’ (That Moment’s Pork Neck) for our pork, which comes conveniently pre-portioned.
Step 2
Heat a pan over medium-high heat without any oil. Add the pork neck slices. These are cut relatively thin, making them delicious even when simply grilled, but they’re also perfect for stir-fries.
Step 3
To eliminate any potential porky smell, add 1 tablespoon of cooking wine (or soju) and stir-fry briskly. This step helps to remove any gamey odors and ensures a cleaner taste.
Step 4
Seasoning is kept simple to highlight the subtle sweetness and aroma of the scallions. We’re using just half a teaspoon of salt and half a teaspoon of black pepper. Keeping the seasoning light allows the natural flavors of the ingredients to shine.
Step 5
Now, it’s time to add the prepared scallions. You can slice them yourself or use pre-cut scallions for convenience. The key is to add the scallions when the pork is about 95% cooked. We want to lightly cook the scallions to preserve their sweet flavor and fresh crunch, rather than making them completely soft. I added the scallions once the pork started to turn golden brown.
Step 6
Drizzle in 1 tablespoon of sesame oil for a nutty finish. Seasoning with just salt, pepper, and sesame oil means you don’t need to serve with a dipping sauce, making this dish extra convenient.
Step 7
Add the toasted sesame seeds, either whole or lightly crushed, for an extra boost of nutty flavor. They add a lovely aroma and texture.
Step 8
Turn off the heat when the scallions have softened slightly, about 30-40%. Even with minimal seasoning, you’ll find a wonderfully fragrant and delicious taste with every bite. This dish is perfect as a side dish for rice or as a savory snack!
