Seasonal Vegetable Side Dish ~ Autumn Radish Greens Stir-fry!
Here’s a delicious stir-fried radish dish made with autumn radishes. It includes a special secret to ensure it’s cooked without excess moisture.
Main Ingredients- 1/2 Korean radish (Mu)
- A little scallion (green onion)
- 1 tsp salt (for brining)

- 2 Tbsp sunflower oil (or cooking oil)

- A pinch of sesame seeds

Cooking Instructions
Step 1
First, peel the autumn radish and julienne it into strips about the same thickness as you would for a fresh salad (saengchae). You can also use a mandoline slicer for easier and more uniform cutting.
Step 2
Add 1 teaspoon of salt to the julienned radish and mix well by gently massaging it with your hands. Let it brine for about 5-10 minutes. The radish is ready when it becomes flexible enough to bend without snapping.
Step 3
After brining, gently squeeze out any excess moisture from the radish with your hands. This is crucial to prevent a watery stir-fry and maintain a crisp texture. Now, place the squeezed radish into a pan along with the sunflower oil and minced garlic. Turn the heat to medium and begin to stir-fry. It’s a good idea to taste a piece of the radish before proceeding and add more salt if needed, according to your preference.
Step 4
Finely chop the scallion and add it to the pan during the stir-frying process. Sprinkle in some sesame seeds as well. Increase the heat to high and stir-fry briskly for about 5 minutes. This step allows the radish to soften slightly and absorb the flavors.
Step 5
After stir-frying for 5 minutes, reduce the heat to medium-low. Cover the pan with a lid and let it cook for another 2-3 minutes. This steaming process will cook the radish thoroughly without making it mushy and remove any remaining raw crunchiness. Turn off the heat, but keep the lid on for about 1 more minute before opening. This residual heat further perfects the texture.
Step 6
Finally, stir in 1 tablespoon of sesame oil and mix everything well. Your delicious autumn radish stir-fry is now complete! This method ensures the radish is perfectly cooked – not too crunchy from being undercooked, nor falling apart from being overcooked. It has just the right tender-crisp texture. Serve it as a wonderful side dish with your rice!
