Main Ingredients- 1/3 medium radish
- 1 Tbsp coarse sea salt (for salting the radish)

- 1/2 Tbsp perilla oil

Cooking Instructions
Step 1
First, check the size of your radish. Cut larger radishes into thirds and smaller ones in half. Then, thinly slice them into matchsticks, about 0.3cm thick, for a pleasant texture.

In a bowl, combine the sliced radish with 1 tablespoon of coarse sea salt. Gently mix and let it sit for 5 minutes. This process draws out moisture, helping to maintain the radish’s crispness. Place the salted radish slices on a colander to drain. You don’t need to squeeze out the water; it will drain sufficiently on its own.

Step 3
Heat 1/2 tablespoon of sunflower oil (or any cooking oil you have) in a pan over low heat. Add 1/2 tablespoon of minced garlic and sauté until fragrant. Once the garlic aroma releases, add the drained radish slices and increase the heat to medium. Stir-fry the radish. The moisture from the radish will be enough for cooking, so no need to add water. If it tastes bland, add a pinch more salt to adjust the seasoning.

Step 4
Stir-fry the radish for about 5 minutes. It’s important not to overcook it, as it can become mushy. Aim for a crisp texture. Just before turning off the heat, add 1/2 tablespoon of toasted sesame seeds and 1/2 tablespoon of perilla oil, and mix lightly to enhance the aroma.

Transfer the stir-fried radish immediately from the pan to a wide bowl or plate. Leaving it in the hot pan can cause it to become watery. Let it cool slightly, then store it in an airtight container in the refrigerator for future use.
