Main Ingredients- 900g Salted Sea Mustard Stems
- 1 Korean Green Chili Pepper
- 4 Tbsp Scallions (chopped)
- 2 Tbsp Minced Garlic
Seasoning Ingredients- 1/2 cup Soju (or cooking wine)
- 3 Tbsp Cooking Oil
- 1 Tbsp Mirin (sweet cooking wine)
- 3 Tbsp Soy Sauce
- 1 Tbsp Oyster Sauce
- 1 Tbsp Fish Sauce
- 1 Tbsp Dasida (or MSG)
- 1/2 Tbsp Sugar
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- 1/2 cup Soju (or cooking wine)
- 3 Tbsp Cooking Oil
- 1 Tbsp Mirin (sweet cooking wine)
- 3 Tbsp Soy Sauce
- 1 Tbsp Oyster Sauce
- 1 Tbsp Fish Sauce
- 1 Tbsp Dasida (or MSG)
- 1/2 Tbsp Sugar
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
We’re starting with 900g of pre-salted sea mustard stems. First, rinse them thoroughly in cold water three times to remove excess salt. Then, place them in a bowl and add enough water to cover them well. Let them soak for 15 minutes. After 15 minutes, discard the water and add fresh water again, soaking for another 15 minutes to leach out more salt. A total of 30 minutes of soaking should achieve a good balance.
Step 2
After soaking for 30 minutes, cut the sea mustard stems into about 5cm lengths. Place them in a bowl and pour in 1/2 cup of soju (or cooking wine). Gently massage them with your hands for a minute. This step helps to eliminate any potential fishy odor. Next, bring a pot of water to a boil and blanch the sea mustard stems for just about 10 seconds. Immediately drain them. Be careful not to over-blanch, as they can become too soft.
Step 3
Stir-frying sea mustard stems is a quick process to achieve the best texture. To avoid being rushed when cooking over high heat, it’s best to have all your ingredients and seasonings prepped and ready before you start.
Step 4
Heat 3 tablespoons of cooking oil in a pan over medium heat. Add the minced garlic and chopped scallions and stir-fry until fragrant. Once the aromatics are fragrant, add the prepared sea mustard stems and increase the heat to high. Stir-fry vigorously. Pour in 1 tablespoon of mirin and continue to stir-fry. Then, add all the prepped seasoning ingredients (soy sauce, oyster sauce, fish sauce, Dasida) and the chopped green chili pepper. Continue to stir-fry rapidly over high heat until everything is well combined and coated. Turn off the heat immediately after this step.
Step 5
With the heat turned off, use the residual heat of the pan to incorporate 1 tablespoon of sesame oil and 1 tablespoon of toasted sesame seeds. Gently stir to coat the sea mustard stems. This finishes your delicious stir-fried sea mustard stems, which will be delightfully nutty and flavorful. Enjoy it while it’s warm or let it cool for a wonderful side dish.
