Stir-Fried Sea Mustard Stems (Miyuk Julgi Bokkeum)

This is my favorite stir-fried sea mustard stems! It’s so quick and easy to make. Serve it with a fried egg and some gochujang (spicy chili paste), mix it all together, and you have a simple yet satisfying meal.

Main Ingredients

  • 478g Salted Sea Mustard Stems
  • 1/2 Onion

Seasoning Ingredients

  • 1 Tbsp Minced Garlic
  • 1 Tbsp Toasted Sesame Seeds
  • 2 Tbsp Canola Oil
  • 2 Tbsp Cooking Wine (Mirin or Sake)
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare 478g of salted sea mustard stems. These stems are known for their satisfying chewy texture and briny flavor.

Place the sea mustard stems in a bowl and rinse them 2-3 times to remove excess salt. Discard the rinsing water. Then, soak the stems in fresh water for about 15 minutes to draw out more salt. You can change the water halfway through to speed up the process. This step is crucial for eliminating any potential fishy odor.

Drain the rinsed sea mustard stems thoroughly in a colander. Once drained, cut them into bite-sized pieces. I’ve cut mine to about 4-5 cm in length, but feel free to adjust the size according to your preference.

Peel and thinly slice half an onion. The sweetness of the onion will complement the sea mustard stems beautifully.

Heat a stir-fry pan over medium-high heat. Add the cut sea mustard stems, 1 tablespoon of minced garlic, the sliced onion, and 2 tablespoons of canola oil. Stir-fry for about 2 minutes until the vegetables begin to soften. Then, add 2 tablespoons of cooking wine and continue to stir-fry for another 3 minutes. The cooking wine helps to further tenderize the stems and adds a layer of flavor.

Turn off the heat. Stir in 1 tablespoon of toasted sesame seeds and a pinch of black pepper. Mix everything well to combine. (Optional: If you find the dish needs more seasoning, you can add a little salt to taste.) Give it a final toss, and your delicious stir-fried sea mustard stems are ready to be enjoyed!
